Speck sandwhich

Authentic tyrol speck with fresh mozzarella, mascarpone cheese, arugula, tomato and vinaigrette with olive oil and balsamico vinegar wrapped in slabs of kneaded root bread which is baked in a stone oven. It requires a long curing time because it is kneaded with natural dough and without any yeast at all.
